镇江糖醋排骨 美味好下饭(视频)

镇江糖醋排骨 Fried Spare ribs in Chinkiang Style

材料 – Ingredients:
小肉排 2 磅- 2 lbs of spare rib. Cut into 1-inch sections
姜 3 大片 – 3 slices ginger
冰糖 1 大粒 – 1 chunk of rock sugar
镇江醋半杯 – 1/2 cup of Chinkiang vinegar
绍酒 6汤汤匙 – 6 tbsp of Shaoxing cooking wine
老抽 1.5 汤匙 – 1 1/2 tbsp of dark soy sauce
鸡粉1汤匙 (用否随意) – 1 tbsp of Chicken powder (Optinal)
白胡椒粉少许 – Pinch of white pepper powder
芝麻油少许 – Pinch of sesame oil
白芝麻粒少许 – Pinch of roasted white sesame
清水半杯 – Half cup of water

做法:
1. 肉排切约吋余长段. 将肉排汆水,冲洗干净沥干待用
2. 用 2 汤匙生油爆姜片刻,然后加入肉排爆香
3. 加入绍兴料酒及老抽略炒片刻
4. 加入镇江醋、冰糖及鸡粉翻炒片刻,加入清水并盖上锅盖,改为小火焖煮至腍
5. 改大火煮至收汁起胶
6. 加入少许白胡椒粉及芝麻油
7. 盛碟并洒上白芝麻便成

Method:
1. Cut spare ribs into 1-inch sections, scald with boiling water for a while.
2. Take out the spare ribs and wash under running water, drain well.
3. Saute gingers with 2 tbsp cooking oil. Add in spare ribs and stir well.
4. Add Shaoxing cooking wine and dark soy sauce, stir well.
5. Add Chinkiang vinegar, rock sugar and chicken powder, then add water.
6. Bring to boil, braise over low heat untill ribs become tender and sauce thickens.
7. Add pinch of white pepper powder and sesame oil.
8. Dish up, sprinkle with roasted white sesame.
