雞仔餅Chicken Biscuits
Ingredients 材料:
Candies pork fat(冰肉):
100g pork fat,diced(豬板油,切粒)
3 tbsp sugar(糖)
1 tbsp rice wine(米酒)
Skin(皮料):
300g plain flour(普通麵粉)
1 tsp alkaline water(鹼水)
180g maltose(麥芽糖)
6-7 tbsp oil(油)
Filling(餡料):
100g candied pork fat(冰肉)
100g candied winter melon,chopped(冬瓜糖,切碎)
60g melon seeds,toasted(瓜子仁,烘香)
60g sesame seeds,toasted(芝麻,炒香)
4 cubes fermented soya bean curd,mashed(南乳,壓爛)
2 tbsp juice of fermented soya bean curd(南乳汁)
3/4 tsp pepper(胡椒粉)
3/4 tsp salt(鹽)
3/4 tsp five spice powder(五香粉)
60g caster sugar(細砂糖)
100g fried glutinous rice flour(糕粉)
2 tbsp garlic,chopped(蒜茸)
80ml water(水)
1/2 tbsp sesame oil(麻油)
1 egg beaten,for glazing
1 蛋,打散,塗麵用
